Desserts that would make Mary Berry proud

Now I am a novice when it comes to desserts, but this little concoction is definitely one of my favourites. Healthy & simple, and most importantly of all, delicious!

This makes a great lazy dessert for when you want something sweet but cannot be bothered to go nuts cooking. A great way to use up some home made smoothie in your fridge 🙂

Purple Protein Passion frozen yoghurt cake served with a healthy shot

Ingredients:

  • Purple Protein Passion smoothie (recipe here)
  • Oat biscuits, roughly 4 of them, ground up
  • 1 tsp hemp seed powder (optional)
  • vegan yoghurt, plain, 2 cups
  • 1 tbs vanilla extract/ 1 vanilla pod
  • 1 tbs honey

Method

  1. Get your ramekins out, put your biscuits in the bottom (mix the hemp seed powder in beforehand if using). Smooth out evenly with a back of a spoon
  2. Get a bowl out, take the yoghurt and mix it with the honey and vanilla. Put this into the bowls
  3. Pop these into the freezer. check every 30 minutes. Make sure they solidify before topping with compote
  4. Take these out 15 minutes or so before you want to eat so they thaw a bit
  5. Take the smoothie and strain it, so you have the juice and the pulp of all the fruit & veg you used. Take the pulp and mix with a little honey, top your cake and dust with leftover biscuits
